Quick and Yummy Faijtas Recipe

Serves 6 people
Ingredients:
1 kg Truss Tomatoes
2 x Spanish Onions
2 Lemons
1 Bunch Coriander
1/2 jar Jalapeños (pickled)
1/4 cup Apple Cider Vinegar
1/4 cup Extra Virgin Olive Oil
Salt and Pepper
Method:
Dice Tomatoes into small pieces and place in a large mixing Bowl
Add finely Diced Onions and Jalapeños
Add finely chopped Coriander
Juice 2 Lemons and add to bowl
Add Apple Cider Vinegar and Olive Oil
Stir and season to taste with Salt and Pepper
Serve with Corn Chips as a Dip or Spoon over tortillas, chicken, wrap and serve immediately.
GUACAMOLE
Ingredients:
4 Avocados
2 Limes
1 or 2 fresh Jalapeños
1/2 Spanish Onion
1/2 bunch Coriander
Salt and Pepper
Method:
Finely dice onion and jalapeños and place in a large mixing Bowl
Add Smashed Avocado
Add finely chopped Coriander
Juice 2 Limes and add to bowl
Stir and season to taste with Salt and Pepper
Serve with Corn Chips or Spoon over tortillas, chicken, wrap and serve immediately.
CHICKEN
Ingredients:
Chili Powder
Ground Cumin
Garlic Powder
Capsicum
Oregano
Salt
Pepper
Method:
Season the chicken. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it in.
Cook the chicken. Heat a large skillet over medium heat and lightly coat it with a drizzle of olive oil or avocado oil. Sear the chicken breasts for about 7-8 minutes on each side. Then remove them from the pan and let them rest for a few minutes before slicing into strips.
Sauté the bell peppers and onion. While the chicken is cooking, cut the bell peppers and onions into thin slices. Then sauté them in the same skillet over medium heat for a few minutes until caramelised.
Mix together. Add the chicken back into the skillet, squeeze fresh lime juice on top and stir everything together.
Wrap it up. Serve immediately with tortillas topped with salsa fresca and guacamole.
